The UK Truffle Festival isn’t just about taste — it’s about the people, stories, and science behind one of the world’s most mysterious delicacies. In 2025, we’re bringing together some of the most respected and passionate voices in the world of truffles to share knowledge, spark curiosity, and inspire both new and seasoned truffle lovers.

This year’s line-up features three outstanding speakers — each bringing years of experience, fresh perspectives, and a passion for sharing the world of truffles with you.

Prof. Paul Thomas — Leading the Way in Truffle Science

Founder of Mycorrhizal Systems Ltd., Chief Scientist at the American Truffle Company, and an Honorary Professor at the University of Stirling, Prof Paul Thomas is one of the most influential voices in modern truffle cultivation.

In 2015, he cultivated the UK’s first Tuber aestivum truffle, followed by the coveted Périgord black truffle (Tuber melanosporum) a few years later — both major breakthroughs for growers across Europe. His latest research dives into the relationship between dog-handler behavior and truffle yield, based on the largest data set of its kind from real-world truffle hunts.

At the festival, Paul will share:

  • How climate change is impacting truffle cultivation — and what can be done.

  • New insights from the National Truffle Centre and hist latest research studies.

Julie Stopforth — The Real Truffle Hunter

Originally a teacher from Liverpool, Julie Stopforth began her truffle journey nearly two decades ago alongside her husband, as they embraced a new life in the Italian countryside. Mentored by a traditional tartufaio, the pair trained their first dog together — unknowingly setting off on what would become a lifelong passion and, eventually, a career.

Today, Julie leads The Real Truffle Hunters, a family-run team that trains dogs and hunts wild truffles across Europe, including the rare and highly prized white truffle (Tuber magnatum pico). With her pack of eight expertly trained dogs, she spends her days exploring forests, following scents, and uncovering one of nature’s most elusive treasures.

You may also know her from her YouTube channel, where she documents the behind-the-scenes life of a truffle hunter.

At her talk, you’ll:

Ben Sweet – Unlocking The Secrets of Truffle Dog Training 

Founder of Truffle Forager and creator of the Build–Search–Hunt (BSH) System, Ben Sweet has trained dozens of dogs to successfully find wild truffles and has consulted on some of the largest truffle orchards in the world. His clear, step-by-step approach has become a go-to framework for both hobbyists and professional truffle hunters.

Beyond the field, Ben hosts the world’s first truffle-focused podcast, the Truffle Forager Podcast, shares training tips and adventures on his YouTube channel, and leads the Truffle Dog Club, the fastest-growing community for truffle dog lovers and enthusiasts.

At Ben’s talk, you’ll:
